Savor the perfect balance of sweet, smoky, and spicy with these Fiery Sweet-n-Smokey Beef, Shrimp, and Pineapple Kabobs. Infused with the irresistible flavors of Claibe's Sweet-n-Smokey Chicken & Pork Rub, Texas VooDoo Spicey Cajun Rub, and Texas Style Brisket Rub, these kabobs bring together juicy chunks of beef, succulent shrimp, and caramelized pineapple for a dish that's sure to steal the show at your next cookout.
Ingredients:
For the Beef:
1 lb beef sirloin, cut into 1-inch cubes
2 tbsp Claibe's Texas Style Brisket Rub
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 ½ tbsp Claibe's Texas VooDoo Spicey Cajun Rub
1 tbsp lemon juice
For the Pineapple:
1 fresh pineapple, cut into 1-inch chunks
1 tbsp Claibe's Sweet-n-Smokey Chicken & Pork Rub
For Assembly:
Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)
Fresh cilantro, chopped (optional garnish)
Lime wedges for serving
The Prep:

Season the Beef: In a large bowl, toss the beef cubes with Claibe's Texas Style Brisket Rub. Mix well, ensuring all the beef pieces are evenly coated. Let it sit for at least 1 hour in the refrigerator to absorb the flavors.
Prepare the Shrimp: In another bowl, combine the shrimp with Claibe's Texas VooDoo Spicey Cajun Rub and lemon juice. Allow the shrimp to marinate for 30 minutes in the refrigerator.
Season the Pineapple: In a separate bowl, sprinkle the pineapple chunks with Claibe's Sweet-n-Smokey Chicken & Pork Rub. Set aside until ready to assemble.
The Cook:
Assemble the Kabobs: Thread the seasoned beef, shrimp, and pineapple onto the skewers, alternating between each ingredient for a colorful and flavorful combination.
Grill the Kabobs: Preheat your grill to medium-high heat. Grill the kabobs for about 8-10 minutes, turning occasionally. For medium-rare beef, cook until the beef reaches an internal temperature of 135°F. The shrimp should be opaque, and the pineapple should have a nice char with caramelized edges.

Rest and Serve: Once cooked, remove the kabobs from the grill and let them rest for a couple of minutes. Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
Serving Suggestions:
These kabobs are perfect served alongside a light and refreshing side salad, grilled corn on the cob, or a chilled quinoa salad. Pair with a cold, crisp beer or a zesty margarita to complete the meal.
Additional Notes:
Nutritional Info: This dish is high in protein and packed with vitamins from the pineapple, making it a delicious and balanced meal option.
Variations: For a milder version, swap the Texas VooDoo Spicey Cajun Rub for Claibe's SPG All Purpose Rub.
Pro Tip: Use a meat thermometer to check the internal temperature of the beef for perfect doneness without overcooking the shrimp.
