Garlic Mashed Potatoes with Claibe’s SPG Rub


Prepare to meet your new favorite side dish—creamy, buttery mashed potatoes infused with roasted garlic and Claibe’s SPG All-Purpose Rub. Perfectly seasoned with a balanced kick of salt, pepper, and garlic, this dish brings comfort food to new heights. Whether you’re pairing it with BBQ ribs or roasted chicken, these mashed potatoes are a surefire hit for any gathering.


Ingredients:

  • 2 lbs Yukon Gold potatoes, peeled and diced

  • 5 garlic cloves, roasted

  • ½ cup unsalted butter

  • ¾ cup whole milk (or heavy cream for extra richness)

  • 1 tbsp Claibe’s SPG All-Purpose Rub

  • Fresh parsley for garnish

  • Salt to taste (optional, as the rub provides seasoning)


The Prep:

  1. Roast the Garlic: Preheat your oven to 375°F. Wrap garlic cloves in foil and roast for 25-30 minutes until golden and aromatic. Set aside.

  2. Boil the Potatoes: In a large pot, cover diced potatoes with cold water and bring to a boil. Cook for 15-20 minutes until fork-tender. Drain and return to the pot to steam dry for a few minutes.

  3. Mash It Up: Add butter, roasted garlic, and milk to the potatoes. Mash until creamy and smooth. For a chunkier texture, mash less.


The Seasoning:
