Claibe's Signature Creamed Corn


Imagine the perfect blend of sweet, fresh corn paired with a savory, buttery sauce seasoned with Claibe’s SPG rub for a hint of garlic and peppery goodness. This creamed corn is rich, velvety, and a true crowd-pleaser at any BBQ or family gathering. Perfect as a side dish to your favorite grilled meats or a comforting standalone treat.


Ingredients:

  • 8 ears of fresh sweet corn, kernels cut off the cob


  • 1 stick of unsalted butter

  • 2 tablespoons all-purpose flour

  • 1 cup heavy whipping cream

  • Whole Milk as needed.

  • 1 tablespoons Claibe’s SPG (Salt, Pepper, Garlic) Rub

  • Fresh parsley, chopped (for garnish)

The Prep:

  1. Prep the Corn: Start by cutting the kernels off the cob, ensure you cut deep enough to remove part of the cobb for texture and flavor. Use the back of your knife to scrape down the cob and collect any remaining juice.


  1. Melt the Butter: In a medium saucepan over medium heat, melt the butter until bubbly.

  2. Create the Roux: Stir in the flour and cook for about 1 minute, whisking continuously until it forms a smooth paste with no lumps.



  1. Add the Cream and Seasoning: Gradually pour in the heavy whipping cream while whisking. Add Claibe’s SPG rub, and cook until the mixture begins to thicken, about 2-3 minutes.

  2. If your roux is too thick, thin with whole milk 1/2 cup at a time until you have the correct consistency.


The Cook:

  1. Introduce the Corn: Add the fresh corn kernels and any juice you’ve collected into the sauce. Stir to combine and bring the mixture up to a gentle simmer.



  1. Simmer and Infuse: Reduce the heat to low and let the corn simmer for 8-10 minutes, stirring occasionally. This allows the flavors from Claibe’s SPG rub to meld beautifully with the corn's natural sweetness.


Serving Suggestions:

  • Garnish: Top with chopped fresh parsley for a pop of color and freshness.
