Experience the bold and spicy flavors of this Southern Clucker Pork Shoulder, featuring Claibe’s Southern Clucker Rub with a hot chipotle kick.
Ingredients
4-5 lbs. pork shoulder
3 tablespoons Claibe’s Southern Clucker Rub
1 cup apple cider vinegar
1/2 cup brown sugar
1/4 cup hot sauce
Preparation Instructions
Preheat your smoker to 250°F.
Rub the pork shoulder generously with Claibe’s Southern Clucker Rub.
Let the pork marinate for at least 1 hour (overnight for best results).
Cooking Instructions
Place the pork shoulder on the smoker and cook for 4-5 hours, spritzing with apple cider vinegar every hour.
Wrap the pork shoulder in aluminum foil and continue smoking for another 2-3 hours until the internal temperature reaches 203°F.
Let the pork rest to an internal temperature of 140°F, then shred it using two forks. Mix with brown sugar and hot sauce.
Serving Suggestions
Serve with cornbread, coleslaw, and a cold beer. Garnish with fresh cilantro.
